Manning Wins Technomics Chili Cook-Off

Arlington, Virginia USA - March 2010 Travis Manning wields his spoon as well as his cooking expertise to win the 1st Annual Technomics Chili Cook-Off. In celebration of the March Madness kick-off on March 18, Technomians chowed down on all types of chili.
Travis provided the following information about his award-winning chili. The chili is a Texas-based chili with a thick meat and bean based chili, the two mainstays. The following lists the ingredients used for the Chili Cook-off:
• Ground Beef 85% Lean
• Chili Beans
• Tomato Sauce
• Chili Powder
• Garlic Powder
• Cumin
• Paprika
• Cinnamon
All ingredients were organic or free-range in the case of the beef. Also, it’s important to note that while the ingredients are listed here - the amounts are ultimately left up to the chef – have fun with it. First, you need to brown the beef. For this chili, I drained the excess grease from browning, then combined the ingredients in a slow cooker to cook on low. The low setting requires a longer cook time, but the goal is a nice thick consistency with this chili, thus a minimum cook time of 6 hours is recommended. The presented chili cooked for nearly 12 hours on low before being served. Also, this recipe is a mild flavor, even a little sweet, while the following may be added to spice it up. Cayenne powder or peppers, Jalapeño peppers, Onion powder, etc., but be sure to keep at least some of the cinnamon. In small doses, cinnamon brings out the conflicting flavors; in larger doses - it sweetens the overall taste. Good luck making your favorite chili.
